Claire’s Frangipane

Ingredients

  • 2/3 cup butter, plus more for coating pan, softened
  • 3/4 cup sugar, plus more for dusting
  • 1/2 tsp. vanilla extract
  • 2 eggs
  • 1 cup almond flour
  • 1/4 cup all-purpose flour (see note)
  • Fresh berries for garnish, optional
  • Whipped cream, for serving, optional

Directions

  1. Heat oven to 350 degrees. Coat an 8-inch springform or cake pan with butter and line the bottom with parchment paper; set aside.
  2. In a mixing bowl, beat butter and sugar with an electric mixer until light and fluffy. Add the vanilla and eggs, one at a time, then slowly add the flours and blend well.
  3. Pour batter into the prepared pan.
  4. Bake 30 to 40 minutes or until golden brown.
  5. Remove from oven, dust with sugar and cool. (Cake will keep, covered at room temperature for up to 3 days.)
  6. Serve topped with berries and whipped cream, if desired.
