Chicken Shawarma with Yogurt-Hummus Sauce

Ingredients

  • 1/2 cup Greek yogurt
  • 1/4 cup purchased classic hummus
  • 1 tsp minced lemon zest
  • 1 tbsp fresh lemon juice
  • 1/2 tsp grated fresh garlic
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 2 tbsp water
  • 2 chicken breasts
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 12 Bibb lettuce leaves

Directions

  1. Preheat grill to medium-high.

  2. For the sauce, whisk together yogurt, hummus, zest, 1 tbsp lemon juice, garlic, 1/2 tsp salt, 1/2 tsp pepper and 1/2 tsp cumin; whisk in water until smooth.

  3. For the chicken, slice breasts, lengthwise, into 12 strips.

  4. Whisk together 2 tbsp lemon juice, oil, 1 tsp cumin, 1/2 tsp salt, and 1/2 tsp pepper for the marinade. Toss strips with marinade and thread, accordion-style, onto four metal skewers. Coat skewers with nonstick spray.

  5. Grill skewers, covered, until breasts are lightly charred and cook through, 3 minutes per side. Transfer skewers to a platter, tent with foil, and let rest 3 minutes.

  6. Serve chicken in lettuce leaves and drizzle with sauce.
