Escarole Salad with Pecorino Romano

Ingredients

  • 3 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 1/2 tsp Dijon
  • 6 cups sliced escarole
  • 3/4 cup packed fresh basil
  • Shaved Pecorino Romano

Directions

  1. Whisk together lemon juice, oil, garlic and Dijon for the vinaigrette.

  2. Toss escarole and basil with vinaigrette; season with salt and pepper. Garnish salad with Pecorino Romano.
