Hawaiian-Style Pulled Pork

Ingredients

  • 3 tbsp hickory smoked salt
  • 6-7 lb pork shoulder
  • 2 tbsp olive oil
  • 1 fresh pineapple, peeled, cored and cut into chunks
  • 1/2 cup pineapple juice
  • 8 hamburger buns

Directions

  1. Rub salt on all sides of pork.

  2. Heat oil in saute pan over medium-high heat until shimmering. Add pork and brown on all sides, about 10 minutes. Transfer pork to a slow cooker and add pineapple chunks and juice.

  3. Cover slow cooker and cook pork until fork-tender on LOW 8-9 hours. Transfer pork to a large bowl, let rest 5 minutes, then shred using two forks.

  4. Strain cooking liquid through a sieve, discarding solids. Pour cooking liquid over meat to moisten.
