Mediterranean Flank Steak

Ingredients

  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • 1/4 cup dry red wine
  • 2 shallot, minced
  • 2 garlic cloves, minced
  • 2 Tbsp. chopped fresh marjoram *
  • 2 tsp. hot sauce
  • 1 (1 3/4 lb.) flank steak
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Combine first 7 ingredients in a shallow dish or large heavy-duty zip-top plastic bag; add flank steak. Cover or seal, and chill 8 hours, turning steak occasionally.
  2. Remove steak from marinade, discarding marinade. Sprinkle steak with salt and pepper.
  3. Grill, covered with grill lid, over medium-high het (35o to 400 degrees) 4 to 6 minutes on each side or to desired degree of doneness. Let stand 5 minutes.
  4. Cut steak diagonally across the grain into thin strips.
