Tomato and Mozzarella Skewers

Ingredients

  • 1 pint cherry tomatoes (16)
  • 4 oz. mozzarella (16 cherry-sized balls)
  • 1/4 oz. fresh basil
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • Seas salt and black pepper to taste

Directions

  1. Wash and dry to tomatoes.
  2. Using wooden skewers or toothpicks, place a tomato, folded basil leaf and mozzarella ball (up to six pieces on each skewer).
  3. Mix balsamic vinegar, olive oil, sea salt and pepper into a bowl, then drizzle over skewers.
  4. (Optional) Let the skewers chill in the refrigerator for approximately 15 minutes.
