Fresh Tomato Salsa

Ingredients

  • 1 lime
  • 1/2 cup cilantro
  • 1/2 onion, finely chopped
  • 1 lb. fresh tomato, chopped
  • 1 jalapeno, finely chopped, no seeds
  • Pinch of dried oregano
  • Pinch of ground cumin
  • Sea salt and black pepper to taste

Directions

  1. Chop tomatoes, jalapeno and onion then place in a food processor. Pulse once or twice to finely dice. If you don’t have a processor, just finely dice ingredients with your knife.
  2. Place veggie mix in a serving bowl and stir in oregano, cumin, salt, pepper and squeeze in the juice from the lime.
  3. Let it chill for 30 minutes.
