Orzo with Sun-Dried Tomatoes

Ingredients

  • 1 cup orzo
  • 2 cups baby arugula
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup Parmesan
  • 2 tbsp butter
  • 1 tsp lemon zest
  • salt and pepper to taste

Directions

  1. Cook orzo as directed. Drain, reserving 1/4 cup cooking water. Toss the orzo and cooking water with arugula, sun-dried tomatoes, Parmesan, butter and lemon zest; season with salt and pepper.
