Ingredients

  • 1/2 cup Onion, diced
  • 1 Red or yellow pepper, rinsed, seeded and diced
  • 1/2 (15oz) can Black beans, rinsed and drained
  • 2 cups Cooked quinoa
  • 1 cup Salsa
  • 1 Avocado, peeled and diced
  • juice from 1/2 lime
  • 1/4 Cup cilantro
  • To taste hot sauce
  • To taste Salt and black pepper
  • 8 leafs Boston Bibb lettuce

Directions

  1. mix all ingredients (except lettuce) together in a bowl. Serve on leaves of lettuce
