Creamy Guacamole

Ingredients

  • 3 tomatillos
  • 3 ripe avocados
  • 1/4 cup sour cream
  • 1/4 cup cilantro
  • 1/4 cup mint
  • 1 garlic clove, grated
  • 2 tsp jalapeno hot sauce
  • Juice of 1/2 lime
  • 1 tsp Kosher salt
  • cayenne pepper, to taste

Directions

  1. Husk the tomatillos. Cook in boiling water until tender, 2-4 minutes; drain, chop and transfer to a food processor. Halve, pit and chop avocados; add to the food processor along with sour cream, cilantro and mint, garlic, hot sauce, lime juice and salt.

  2. Puree until smooth. Transfer to a bowl and season with more salt and cayenne.
