Harvest Spice Cake with Cream Cheese Frosting

Ingredients

  • 1 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1 cup firmly packed light brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 1/2 tsp. McCormick Gourmet Collection Saigon Cinnamon
  • 1 cup buttermilk
  • 1 tsp. vanilla extract
  • 1 cup chopped mixed dried fruit
  • 1 cup chopped pecans
  • Cream Cheese Frosting:
  • 1 (8 oz.) pkg. softened cream cheese
  • 1/2 cup softened butter
  • 1 (16 oz.) pkg. powdered sugar
  • 1 1/2 tsp. vanilla extract

Directions

  1. Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add eggs, 1 at a time, beating until blended after each addition.
  2. Combine flour and next 3 ingredients; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in vanilla extract, dried fruit, and pecans. Pour into 3 greased and floured 9-inch cake pans.
  3. Bake at 350 degrees for 20 to 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool on wire racks.
  4. Spread Cream Cheese Frosting between layers and on top and sides of cake. Store in refrigerator.

  6. Beat cream cheese and butter together until creamy. Gradually add powdered sugar and vanilla extract; beat until light and fluffy.
