Slow-Cooked Lemony New Potatoes

Ingredients

  • 4 medium carrots, halved lengthwise and cut into 1-inch pieces
  • 1 large sweet onion, coarsely chopped
  • 1 1/2 lbs baby red potatoes, quartered
  • 3 tbsp butter, melted
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp grated lemon peel
  • 2 tbsp minced fresh chives

Directions

  1. Place carrots and onion in slow cooker; top with the potatoes. Drizzle with melted butter; sprinkle with salt and pepper. Cook, covered, on LOW 4-5 hours or until vegetables are tender.

  2. Stir in grated lemon peel.

  3. Reserve 3 cups potato mixture for Primavera Chicken Soup. To serve, sprinkle remaining potato mixture with chives.
