Spinach Steak Pinwheels

Ingredients

  • 1 1/2 lbs beef top sirloin steak
  • 8 bacon strips, cooked
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup grated Parmesan
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper

Directions

  1. Cover steak with plastic wrap; pound with a meat mallet to 1/2-inch thickness. Remove plastic.

  2. Place bacon widthwise at center of steak. Combine remaining ingredients; spoon over bacon. Starting at a short side, roll up steak like a jelly roll; fasten with toothpicks. Cut into six slices.

  3. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack. Grill the pinwheels, covered, over medium heat for 5-6 minutes per side or until beef reaches desired doneness. Discard toothpicks; serve.
