Jamaican Chicken with Couscous

Ingredients

  • 20oz can unsweeted pineapple tidbits, undrained
  • 1 tsp salt, divided
  • 1 cup uncooked whole wheat couscous
  • 1/3 cup flour
  • 2 tbsp minced cilantro
  • 1 1/2 lbs chicken breasts, cut into 1/2-inch thick strips
  • 2 tsp Caribbean jerk seasoning
  • 3 tbsp olive oil, divided

Directions

  1. In a saucepan, bring pineapple and 1/2 tsp salt to a boil. Stir in couscous. Remove from heat; let stand, covered, 5 minutes. Fluff with a fork.

  2. In a shallow bowl, mix flour and 2 tbsp cilantro. Toss chicken with jerk seasoning and remaining salt. Toss lightly in flour mixture, a few pieces at a time. Shake off excess.

  3. In a large skillet, heat 1 tbsp olive oil. Add a third of the chicken; cook for 1-2 minutes on each side or until no longer pink. Repeat with remaining oil and chicken. Serve with couscous.
