Lemon-Thyme Asparagus

Ingredients

  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 lb sliced fresh mushrooms
  • 1 tbsp butter
  • 1 tsp olive oil
  • 1 1/2 tsp minced fresh thyme
  • 1 tsp grated lemon peel
  • 1/2 tsp salt
  • 1/2 tsp lemon juice
  • 1/4 tsp pepper

Directions

  1. Saute asparagus and mushrooms in butter and olive oil until tender. Stir in thyme, lemon peel, salt, lemon juice and pepper.
