Hot Pepper Lentils

Ingredients

  • 1 cup canned lentils, rinsed and well drained
  • 1 cup frat-free, low-sodium chicken broth
  • 1/2 cup frozen chopped onion
  • 1/8 tsp. crushed red pepper flakes
  • Salt and freshly ground black pepper
  • 2 Tbsp. chopped parsley

Directions

  1. Place lentils and broth in a saucepan over medium-high heat. Add onion and crushed red pepper. Simmer 10 minutes or until most of liquid is evaporated. Add salt and pepper to taste, sprinkle with parsley and serve.
