Carrot Cake Oats

Ingredients

  • 1/2 cup quick or rolled oats
  • 1/2 cup unsweetened vanilla almond milk or regular milk
  • 1/2 small banana, mashed
  • 2 tbsp grated carrot
  • 1 tbsp chopped pecans
  • 1/2 tsp maple syrup

Directions

  2. Pour your oats and liquid of choice into a bowl or jar.
  3. Stir in banana, carrot, pecans and maple syrup.
  4. Cover and let sit overnight in the refrigerator (or for at least 30 minutes if using quick oats).
  5. In the morning, top with more fresh fruit, granola, coconut, a dollop of almond butter (or all of the above!) and enjoy.
