Jerk Tofu

First time I made this the cooking time was way too long. I’d say more like 45 min. V. tasty marinade! Goes great with a salad.

Cook time: 60 minutes
Serves 4 people

Ingredients

  • 2 cakes firm tofu
  • 1 medium onion, coarsely chopped
  • 3 green chiles
  • 3 tablespoons soy sauce
  • 1/4 cup red wine vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper

Directions

  1. Press tofu for at least 30 min.

  2. Combine the rest of the ingredients and puree until smooth.

  3. Preheat oven to 200 deg C.

  4. Cut tofu into triangles about 1-2 cm thick.

  5. Toss tofu in jerk marinade and place on an unoiled baking dish. Bake for 1 hour turning tofu every 20 min.
