The best Lemon Bars

Ingredients

  • 1 c. butter
  • 1/2 c. powdered sugar
  • 2 c. flour
  • 1/2 tsp salt
  • 4 eggs
  • 6 TB lemon juice
  • 13/4 c. sugar
  • ⅓ c. flour
  • Powdered sugar (for topping)

Directions

  1. Mix first four ingredients together (butter, powdered sugar, flour, salt).
  2. Pat into a 9×13 pan.
  3. Bake at 375 for 20 minutes (DO NOT let it get brown, keep it light!)
  4. Cool slightly.
  5. In a blender, blend remaining ingredients (eggs, lemon juice, sugar, and flour) until frothy.
  6. Pour over slightly cooled crust.
  7. Bake at 350 for 20 minutes.
  8. Remove from oven and top with powdered sugar.
