Pork Pie

(from aloogobi’s recipe box)

Categories: Dinner

  • Leftover pork, can be from roast or chops, cut up
  • Potatoes, chopped
  • Onions, chopped
  • Brown gravy
  • Dough for 2-piece pie shell

  1. Mix together the potatoes and onions, enough to fill a pie shell (including the pork pieces), put in a microwaveable casserole.

  2. Microwave potatoes and onions until the are tender.

  3. Mix in the pork pieces, add some gravy to coat everything, but filling should not be too wet.

  4. Use this mixture to fill the pie shell, put on the top crust.

  5. Bake at 425 degrees for 15 minutes, then lower temperature to 350 degrees for about 25 minutes. Check, and cook longer if necessary.

  6. This is the pie as my grandmother used to make it, but you can jazz it up with other spices and seasonings if you like.
