Mincemeat Stuffing

Ingredients

  • 1 (16 oz.) stale French bread loaf
  • 3 Tbsp. butter or margarine
  • 1 large onion, chopped
  • 2 celery ribs, chopped
  • 2 cups prepared mincemeat
  • 1/2 cup chopped pecans, toasted
  • 1/3 cup dry white wine
  • 3 Tbsp. chopped fresh parsley
  • 1 Tbsp. chopped fresh or 1 tsp. dried sage
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 large eggs, lightly beaten

Directions

  1. Cut bread into 1-inch cubes; place in a large bowl, and set aside.
  2. Melt butter in a large skillet over medium heat. Add chopped onion and celery, and sauce 5 to 7 minutes or until onion is tender.
  3. Add onion mixture to bread cubes. Stir in remaining ingredients.
  4. Spoon mixture into a lightly greased 2 -quart baking dish.
  5. Bake at 350 degrees for 35 to 40 minutes or until stuffing is set in the center.
