Fried Rice

Ingredients

  • 1 medium onion, chopped (about 1/2 cup)
  • 1/2 cup chopped celery
  • 1 Tbsp. vegetable oil
  • 3 cups cooked white or brown rice
  • 1/2 cup chopped leftover cooked ham, pork or poultry
  • 1/2 cup chopped leftover vegetables such as carrots, peas, broccoli
  • Soy sauce, optional

Directions

  1. Saute onion and celery in vegetable oil in a large skillet until tender, about 3 minutes. Add rice, stirring to separate. Add meat and vegetables. Cook, stirring constantly, until heated through. Serve with soy sauce, if desired.
