Confiture de Lait aka Milk Jam

Ingredients

  • 4 cups PLUS 6 Tbsp. whole milk
  • 3/4 cup PLUS 1 tsp. granulated sugar
  • 3/4 cup firmly packed brown sugar
  • 1 vanilla bean, split lengthwise

Directions

  1. In a heavy saucepan, combine the milk, sugars and vanilla. Bring mixture to a boil over medium heat, stirring to dissolve sugars. Once mixture comes to a boil, reduce heat to a simmer and cook, stirring occasionally (and increasing frequency as mixture thickens) with a heat-safe rubber spatula for 1 1/2 to 2 hours. Mixture will reduce, thicken and caramelize as it cooks. Remove and discard vanilla bean.
  2. Cool completely before refrigerating in an airtight container.
  3. makes about 1 1/2 cups
