Chicken and Black Bean Flautas

Ingredients

  • 1 cup shredded rotisserie chicken
  • 1 cup black beans, drained and rinsed
  • 1 chipotle pepper, finely diced
  • 2 Tbsp. adobo sauce
  • 8 ( 5-inch) flour tortillas
  • 8 oz. grated pepper jack cheese
  • Cooking spray or olive oil
  • Salsa, sour cream and guacamole (optional)

Directions

  1. Preheat oven to 425 degrees. Spray a large baking sheet with cooing spray.
  2. Combine chicken black beans, chipotle and adobo sauce in a small bowl.
  3. Spoon about 1/4 cup chicken mixture onto a tortilla and top with 2 Tbsp. cheese. Roll up tightly and place, seam side down, on prepared baking sheet. Continue assembling flautas, one at a time.
  4. Once all of flautas have been rolled, spray tops with additional cooking spray or brush lightly with olive oil. Bake 10 minutes, flip each one over and bake 5 additional minutes, until golden brown. Serve with salsa, sour cream and guacamole, if using.
