Angry Red Mullet ( Triglie Incazzate)

Serves 4 people

  • 75gm butter
  • 1tbl sage finely chopped
  • 1tbl rosemary finely chopped
  • 1tbl parsley finely chopped
  • 1tbl fresh chilli pepper coarsely chopped
  • 4xred mullet 250g each scaled and filleted
  • 1xglass red wine
  • salt
  • sprig of rosemary to decorate


  1. Heat the butter in a pan add the herbs and chilli and stir fry for half a minute.

  2. Add the fillets of fish and fry for 12 minutes on each side.

  3. Set aside the fish and deglaze the pan with the wine.

  4. Taste for salt.

  5. Reunite the fish with the sauce warm and serve decorated with a sprig of rosemary.

  6. Incazzate like arrabbiate means literally angry but in cookery has come to mean hot due to the addition of chilli.
