Little Bitty Cakes

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 1 tsp. vanilla extract
  • Faux Fondant:
  • 8 (2 oz.) squares vanilla candy coating
  • 1/2 cup whipping cream
  • Assorted colors liquid food coloring
  • Buttercream Frosting:
  • 2 Tbsp. butter or margarine, softened
  • 2 Tbsp. milk
  • 1 cup sifted powdered sugar
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • Candied Flowers and Raspberries:
  • 36 small rose petals, violets, or pansies
  • 36 small fresh mint leaves
  • 2 cups sifted powdered sugar
  • 1 Tbsp. meringue powder
  • 1/3 cup water
  • 36 fresh raspberries
  • 1 cup superfine sugar

Directions

  1. Beat butter or margarine at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition.
  2. Bake at 350 degrees for 12 minutes or until golden. Remove from pans; cool on wire racks.
  3. Insert a small fork into bottom of cake, and dip in faux fondant, making sure to cover top and sides. Place upright on a wire rack until set. Repeat procedure with remaining cakes and fondant.
  4. Spoon Buttercream Frosting into a heavy-duty zip-top plastic bag. Pipe a dollop of frosting onto each cake, and decorate with Candied Flowers and Raspberries.

  6. Faux Fondant:

  7. Microwave vanilla candy coating and whipped cream in a 1-quart microwave-safe dish at MEDIUM 3 minutes and 30 seconds, stirring once, Divide and tint with desired food colorings.
  8. makes 2 cups

  9. Buttercream Frosting:

  10. Beat all ingredients at medium speed with an electric mixer until smooth.
  11. makes about 1 cup

  12. Candied Flowers and Raspberries:

  13. Rinse petals and leaves; let dry on paper towels.
  14. Beat powdered sugar, meringue powder, and 1/3 cup water at low speed with an electric mixer until blended; beat at high speed 4 to 5 minutes or until fluffy.
  15. Brush powdered sugar mixture on all sides of petals, raspberries and leaves; sprinkle with superfine sugar. Let stand on wire racks 24 hours.
