Fajita in a Bowl

Ingredients

  • 1 tbsp brown sugar
  • 1 tbsp chili powder
  • 1/2 tsp salt
  • 1 lb beef flank steak
  • 16 mini sweet peppers
  • 1 red onion, cut into 1-inch pieces
  • 2 cups cherry tomatoes
  • 2 ears sweet corn, husks removed
  • 12 cups torn mixed salad greens
  • 1 cup fresh cilantro leaves
  • 1/2 cup lime vinaigrette
  • Cotija cheese and grilled flour tortillas, optional

Directions

  1. Mix sugar, chili powder and salt; rub over steak. Thread peppers and onion onto metal skewers. Thread tomatoes onto separate skewers.

  2. Grill steak 8-10 minutes per side or until meat reaches desired doneness. Grill peppers and corn, covered, over medium heat 10-12 minutes or until lightly charred; turn occasionally. Grill tomatoes for 3-4 minutes or until soft; turn occasionally.

  3. Remove vegetables from skewers, cut corn from cobs. Slice steak across the grain. Lightly toss greens with cilantro and vinaigrette. Top with vegetables and steak. If desired, serve with cheese and tortillas.
