Chicken with Fire-Roasted Tomatoes

Ingredients

  • 2 tbsp garlic-herb seasoning blend
  • 1/2 tsp salt
  • 1/4 tsp Italian seasoning
  • 1/4 tsp pepper
  • 1/8 tsp red pepper flakes
  • 4 chicken breasts
  • 1 tbsp olive oil
  • 14.5 oz can fire-roasted diced tomatoes, undrained
  • 3/4 lb fresh green beans, trimmed
  • 2 tbsp water
  • 1 tbsp butter

Directions

  1. Mix the first 5 ingredients; rub over chicken. In a large skillet, heat oil over medium heat. Brown chicken on both sides. Add tomatoes; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until chicken reaches 165.

  2. In a 2-qt microwave-sage dish, combine beans and water; microwave, covered, on high 3-4 minutes. Drain.

  3. Remove the chicken; keep warm. Stir butter and beans into the tomato mixture. Serve with chicken.
