Penne with Chunky Kalamata Olive Sauce

Ingredients

  • 1 14 1/2 oz. can diced tomatoes with peppers and onions
  • Nonstick cooking spray
  • 1 large onion finely chopped (about 1 cup)
  • 4 cloves garlic, minced
  • 1 7 oz. jar roasted red pepper, drained and chopped (1 cup)
  • 4 oz. penne pasta
  • 2 tsp. dried basil, crushed or 2 Tbsp. snipped fresh basil
  • 1/2 cup coarsely chopped pitted Kalamata olives

Directions

  1. Drain tomatoes, reserving 1/4 cup of the juice; set aside. Spray a saucepan with nonstick cooking spray. Cook and stir onion and garlic over medium heat for 5 minutes or until tender. Add tomatoes, reserved juice, peppers, and dried
  2. basil (if using).

  3. Bring mixture to boiling. Reduce heat and simmer, uncovered, for 15 minutes or until most of the liquid has evaporated, stirring occasionally. Meanwhile, prepare pasta according to package directions; drain.
  4. Remove sauce from heat. Stir in olives and fresh basil (if using). Serve over pasta.
