Bacon-Wrapped Onion Rings

Ingredients

  • 2 large sweet onions
  • dry spice rub (such as McCormick Grill Mates)
  • 2 lb. bacon, thinly sliced

Directions

  1. Slice onions about 1/2 inch thick and separate into rings. Dust with dry spice rub. Wrap each onion ring with a strip of thinly sliced bacon. Secure the bacon with a toothpick.
  2. Sear the wrapped onion rings directly over the colas for about 1 minute per side, then move them to the cooler side of the grill and cook covered for about 1 hour or until the bacon is crispy. Brush with barbecue sauce and continue to cook an additional 15 minutes to set the sauce.
  3. Sriracha Mayo Dipping Sauce:

  4. Combine 1/2 cup mayonnaise, 2 Tbsp. Sriracha hot sauce, 2 tsp. lime juice, 1/2 tsp. paprika and salt and pepper to taste.
