Sharon’s Kidney Beans

  • you dont have to finely chop anything, i just throw shit in there :)
    Soft peas = good peas :)

Ingredients

  • 2 tin Kidney beans
  • 2 Onion finely chopped
  • 2 Tomato finely chopped
  • 4 cloves Garlic finely chopped
  • 1/2 Red bell pepper (capsicum) chopped
  • 500 grams pumpkin (about as big as a pop tart)
  • 2 teaspoons coconut milk powder
  • mushrooms sliced if you like.....FRESH tho

Directions

  1. Heat one tablespoon off cooking oil in pot ( a pot with a thick base is best (to prevent burning at bottom) as beans must boil for as long as possible to really soften )

  2. Add onions, garlic, sweet pepper, allow to sautee for a few mins

  3. Add can of red beans after draining half the water

  4. Add salt and black pepper along with tomatoes and allow to bubble….cover and leave cooking, stirring occasionally.

  5. After 5-10 mins add crushed pumpkin and coconut milk, cover and leave cooking

  6. Stir often to avoid sticking or burning

  7. Add water if it begins to dry out

  8. Taste frequently and add spices to suit…..little cayenne would be good, paprika too.

  9. Touch of brown sugar if you go overboard with the spice :) (experience talking :)

  10. Allow to boil for as long as possible to truly soften peas

  11. Soft peas = good peas :)
