Cilantro-Kale Salad with Buttermilk Dressing

Ingredients

  • 5 tablespoons low-fat buttermilk
  • 1/4 cup cilantro stems
  • 3 tablespoons sour cream
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 5 ounces baby kale
  • 1/4 cup chopped cilantro stems
  • 4 radishes, thinly sliced

Directions

  1. Combine buttermilk, 1/4 cup cilantro stems, sour cream, pepper, and salt in a mini food processor; process until combined. Combine kale, 1/4 cup chopped cilantro stems, and radishes in a bowl. Drizzle salad with dressing.
