fish paste marinade

for oven baking fish

Ingredients

  • 2 chillies
  • 1/2t rock salt
  • 3-4 garlic cloves
  • 1.5 cc ginger
  • 2 shallots
  • 3 kaffir lime leaves
  • coriander root
  • 2-3 candlenuts
  • 2 slices galangal
  • 1 lime
  • dash mirin
  • dash soy sauce
  • 3 salaam leaves

Directions

  1. rub the fish with halved lime

  2. smash other ingredients up in mortar & pestle

  3. rub onto fish – slash fish for better take-up

  4. throw in a bit of mirin etc if you feel like it
