Chicken Sausage, Peppers, Sweet Onion and Potatoes

Ingredients

  • 4 fresh chicken sausages (about 3/4 lb.)
  • 2 lbs. small tricolor potatoes
  • 3 red sweet peppers seeded, sliced
  • 1 sweet onion, sliced
  • 4 cloves garlic, sliced
  • 3 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. Italian seasoning
  • 1/4 tsp. black pepper

Directions

  1. On a large, lightly greased, rimmed sheet pan, spread sausages, potatoes, peppers, onion and garlic.
  2. In a small bowl, whisk together olive oil, salt, Italian seasoning and black pepper.
  3. Roast at 400 degrees for 45 minutes, until vegetables are tender.
  4. To cook on the grill:

  5. Tear off 2 sheets of heavy duty aluminum foil, and layer them together. Place sausage and vegetables in center of foil, and drizzle with the seasoning mixture. Toss gently to coat. Fold foil over all, making a double seam to seal, and twisting ends to close.
  6. Place packet on the grill rack over indirect heat (400 degrees) and close lid. Cook for 45 minutes, or until vegetables are tender.
