Stuffed Artichokes

Ingredients

  • 2 Tbsp. lemon juice
  • 4 globe artichokes
  • 1 1/2 cups plain bread crumbs
  • 1 cup shredded Asiago cheese
  • 1/2 cup parsley, chopped
  • 1/3 cup extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp. chopped thyme
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Directions

  1. Bring a pot of lightly salted water and lemon juice to a boil. Trim stems and cut off top third of artichokes. Add artichokes to pot and boil 25 minutes. Remove artichokes with a slotted spoon
  2. and rinse upside under cold water. Turn upside down onto paper towels and let drain 5 minutes.

  3. Meanwhile, heat oven to 400 degrees. To prepare stuffing, combine all remaining ingredients.
  4. Place drained artichokes in a small baking dish. Divide stuffing evenly among artichokes, filling between leaves. Bakes 15 to 20 minutes,
  5. until golden.
