Gnocchi, Peas and Prosciutto

Ingredients

  • 1 Tbsp. extra-virgin olive oil
  • 3 oz. prosciutto, chopped
  • 1 cup heavy cream
  • 1/4 cup shredded Parmesan, plus more for serving
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 pkg. (17.5 oz.) gnocchi
  • 1 1/2 cups shelled English peas

Directions

  1. Bring pot of lightly salted water to a boil.
  2. Heat oil in a large skillet over medium heat. Add prosciutto and cook 3 to 5 minutes, until crispy. Add heavy cream, bring to a simmer and cook 1 minute, until slightly thickened. Stir in Parmesan, salt and pepper.
  3. Add gnocchi and peas to water, cook 2 minutes. Drain and add to cream sauce. Return to a simmer and toss to coat. Sprinkle with more Parmesan.
