Fire-Roasted Ratatouille with Linguine

Ingredients

  • 2 small eggplants
  • 2 medium zucchini
  • 6 plum tomatoes, halved
  • 1 red onion, cut in wedges
  • 2 sweet red peppers cut in large strips
  • 3 Tbsp. olive oil
  • 13/4 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 lb. cooked spinach linguine
  • 1 cup sliced basil
  • 1/4 cup white balsamic vinegar
  • 1 can (15 oz.) warm drained butter beans
  • 1 Tbsp. olive oil

Directions

  1. Cut eggplants and zucchini into 1/4-inch planks. Brush vegetables with olive oil, season with salt and black pepper. Grill in 2 batches, 4 minutes per side.
  2. Coarsely chop veggies and stir into cooked spinach linguine. Add sliced basil, white balsamic vinegar and butter beans. Drizzle with olive oil.
