Tomatillo Chicken tostadas

Ingredients

  • 8 corn tortillas
  • 1 Tbsp. canola oil
  • 1 cup red onion, chopped
  • 1 lb. ground chicken
  • 1 1/2 cups tomatillo salsa
  • 3/4 cup shredded taco cheese blend
  • shredded lettuce
  • chopped tomato

Directions

  1. Place corn tortillas on a large baking sheet and coat with nonstick cooking spray. Bake at 350 degrees for 15 minutes.
  2. meanwhile, heat canola oil in a large nonstick skillet over medium-high heat; add red onion and cook 3 minutes. Crumble in ground chicken; cook 5 minutes, until no longer pink. Stir in salsa; cook 2 minutes, until liquid evaporates. Top tortillas with chicken mixture, cheese blend, shredded lettuce and chopped tomato.
