Gluten-Freee Crumb Cake

Ingredients

  • cake
  • 1 box (15 oz.) yellow gluten-free cake mix
  • 2/3 cup sour cream
  • 3 large eggs
  • 1/2 stick (1/4 cup) unsalted butter, softened
  • 1/2 tsp. ground cinnamon
  • Crumb Topping
  • 1 3/4 cups gluten-free all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • Pinch of salt
  • 1 stick (1/2 cup) unsalted butter, softened
  • Confectioners' sugar, for dusting

Directions

  1. Heat oven to 350 degrees.
  2. Cake: Beat all ingredients together. Spread into a foil-lined 13 × 9 × 2 inch pan. Bake 18 minutes.
  3. Crumb Topping: Meanwhile, combine first 5 ingredients. Work in butter with your fingers until crumbs form. Carefully sprinkle a thick layer over cake and bake 10 minutes. Cool completely on a wire rack.

  4. Dust with confectioners’ sugar or blend 1/2 cup confectioners’ sugar with 1 Tbsp. sour cream and 2 tsp. water and drizzle over cake.
