Maryland Corn Pops

Ingredients

  • 8 medium ears sweet corn, husks removed
  • 2 tbsp canola oil
  • 1 1/2 cups mayo
  • 1 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 24 corncob holders
  • 8 oz crumbled feta
  • 2 tbsp seafood seasoning
  • 1/4 cup minced fresh cilantro
  • Lime wedges

Directions

  1. Brush oil on all sides of corn. Grill, covered, over medium heat 10-12 minutes or until tender and lightly browned, turning occasionally. Remove from grill; cool slightly.

  2. Meanwhile, in a small bowl, mix mayo, garlic powder and pepper. Cut each ear of corn into thirds. Insert one corn cob holder into each piece. Spread corn with mayo mixture; sprinkle with cheese, seafood seasoning and cilantro. Serve with lime wedges.
