Cheddar Cigars

Ingredients

  • 1 can olive oil cooking spray (or 1/4 cup olive oil to brush)
  • 1 teaspoon salt
  • 1 tablespoon oregano (dried)
  • 1 teaspoon black pepper (freshly ground)
  • 2-3 tablespoons corn chips (finely crushed)
  • 9 sheets phyllo dough (thawed)
  • 1 block cheddar cheese (sharp yellow, cut into 1/2-inch by 1/2-inch by 3-inch long pieces)
  • • 2 cups salsa (store-bought)
  • • 1/4 cup cilantro (leaves chopped)

Directions

  1. Preheat oven to 450ºF.

  2. Prepare a baking sheet with olive oil cooking spray or brush with olive oil.

  3. In a small mixing bowl, combine salt, oregano, pepper, and corn chips.

  4. Lay out one sheet of phyllo lengthwise on a clean work surface.

  5. Spray or brush bottom half of sheet with olive oil and sprinkle with seasoning mixture.

  6. Fold in half.

  7. Spray or brush the top with olive oil.

  8. Cut phyllo in half crosswise.

  9. Place 1 piece of cheddar cheese along the short side of each phyllo sheet.

  10. Fold over top and bottom ends of phyllo and continue to roll like a cigar to enclose cheese. Place on prepared baking sheet.

  11. Spray with oil.

  12. Repeat with remaining ingredients to make 18 cheddar cigars.

  13. Bake for 4-5 minutes.

  14. Remove, slice in half and serve.
