Teriyaki Chicken with Homemade Teriyaki Sauce

Ingredients

  • 4 tbsp Teriyaki Sauce Marinade
  • 4 chicken breasts
  • 1 tbsp oil
  • Teriyaki Sauce Marinade:
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp Japanese cooking wine (sake)
  • 2 tbsp water

Directions

  1. Marinade:

  2. Combine the 4 ingredients in a small saucepan.

  3. Bring to a boil over high heat, then turn heat down and simmer until it reduces by half, around 5 minutes.

  4. Bring to room temp before using.

  5. Chicken:

  6. Combine the marinade with the chicken and marinate for at least 20 minutes, preferably overnight.

  7. Remove chicken from marinade but do not discard the marinade liquid.

  8. Heat oil in fry pan over medium to medium-high heat.

  9. Place chicken in the pan and cook the first side for around 3 minutes.

  10. Turn chicken over and cook the other side. Just before the chicken is finishing cooking, add 2 tbsp water to the pan and swirl around and mix with the marinade that has come off the chicken to make a bit of “sauce.”

  11. Serve with rice.
