Pork Carnitas Quesadillas with Caramelized Onions

Ingredients

  • 1 1/2 cups shredded Pork Carnitas
  • 1 1/2 cups shredded mozzarella
  • 8 tortillas
  • 1/2 cup corn kernels
  • 1/2 cup red bell pepper, diced
  • 1 tbsp olive oil
  • Salt and pepper
  • Caramelize Onions:
  • 1 1/2 tbsp butter
  • 2 brown onions, finely sliced
  • 1 1/2 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • Black pepper

Directions

  1. Caramelized onions: Melt butter in a fry pan over medium heat. Add onions and cook for 7 minutes, stirring every now and then so they cook evenly. Add remaining ingredients and cook for another 5 minutes, stirring occasionally until sticky and caramelized. Remove from heat and set aside.

  2. Brown Pork Carnitas: Heat 1/2 tbsp oil in a fry pan over high heat. Add pork carnitas and press down lightly with a spatula to help crisp up. Crisp for about 1 1/2 minutes, do not flip).

  3. Assemble: Lay out the tortillas. Divide the cheese between the tortillas, scattering evenly across half of each tortillas. Top with pork carnitas, corn, bell pepper and caramelized onion. Season to taste with pepper and salt. Fold the tortillas in half.

  4. Heat 1/2 tbsp olive oil in a large pan over medium high heat. Add as many quesadillas as will fit in the pan. Cook until nicely browned on the underside (about 1 1/2 minutes), then flip over the folded edge. Cook the other side until browned, then remove from pan.

  5. Serve immediately, garnished with parsley.
