Almanzo’s Favorite Swiss Steak

Serves 6 people

Ingredients

  • 1/2 cup flour
  • 1 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 2 to 3 lbs. round steak, 1 1/2 inches thick
  • 2 Tbsp. butter
  • 2 Tbsp. oil
  • 2 cloves garlic, chopped
  • 1 can condensed cream of mushroom soup, diluted with 2 cans milk or water

Directions

  1. Combine flour and seasonings. Pound the flour into both sides of the steak and let stand for 1/2 hour.
  2. Beat butter and oil in large skillet. Brown steak on both sides. Add garlic and cook for 1 minute.
  3. Add soup and simmer for 1 to 2 hours, until meat is tender. Cooking time will depend upon the thickness and tenderness of the meat.
