Almond-Basil-Parsley Pesto

Ingredients

  • 1/2 cup parsley leaves, packed
  • 1/2 cup basil leaves, packed
  • 1/2 cup whole toasted almonds
  • 2 garlic cloves
  • 1/3 cup almond oil or olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp. feta cheese
  • 1/2 tsp. salt
  • Freshly ground black pepper

Directions

  1. Place parsley, basil, almonds and garlic in the bowl of a food processor. Pulse until finely hopped. Gradually mix in oil and process until pureed. Mix in Parmesan and feta cheeses, salt, and pepper.
  2. makes 3/4 cup

  3. use as a spread for sandwiches, pasta, vinaigrette or anything you like.
