Mint Brownies

Ingredients

  • Filling:
  • 8 oz. Cream cheese, softened
  • 1/4 c sugar
  • 1 egg
  • 1 tsp mint extract
  • 4 drops green food color
  • Brownies:
  • 1 c butter
  • 4 oz. unsweetened chocolate, pieced
  • 2 c sugar
  • 2 tsp vanilla
  • 4 eggs
  • 1 c flour
  • Frosting:
  • 2 tbsp butter
  • 2 tbsp corn syrup
  • 2 tbsp water
  • 2 oz. unsweetened chocolate, pieced
  • 1 tsp vanilla
  • 1 c powdered sugar

Directions

  1. Filling: combine cream cheese and sugar. Beat until smooth. Add the egg, extract and color. Mix.

  2. Brownie: Melt butter and chocolate over low, stir constantly. Remove form heat, cool 15 min.

  3. Stir sugar and vanilla into chocolate mix.

  4. d 4 eggs one at a time, beat after each 1.

  5. Stir in flour, mix well.

  6. Spread into greased and floured pan.

  7. Carefully spoon filling over brownie mix.

  8. Lightly swirl together.

  9. Bake at 350 for 45-50 minutes. Cool 1 hr.

  10. Frosting;Combine butter, corn syrup and water and bring to a rolling boil.

  11. Remove from heat.

  12. Add chocolate, stir until melted.

  13. Stir in vanilla and powdered sugar.

  14. Beat until smooth.

  15. Frost brownies when cooled.

  16. STORE in refrigerator.
