Almond Chinese Rice

Ingredients

  • 1 lb. pork sausage
  • 2 cups uncooked rice
  • 2 lb. onions, cut fine
  • 2 celery stalks, cut fine
  • 1 bell pepper, cut fine
  • 3 pkg. dry noodle soup
  • 9 cups boiling water
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 lb. slivered almonds

Directions

  1. Fry sausage; brown rice in sausage grease. Add onions, celery and pepper; simmer for 15 minutes.
  2. Cook soup in water for 10 minutes. Add salt and pepper. Pour over mixture in casserole dish; bake 1 hour 30 minutes at 350 degrees. Add more water if needed ; put almonds on top while baking.
