Low-Fat Chocolate Oat Muffins

Ingredients

  • 2 cups oat flour
  • 1/3 cup brown sugar, packed
  • 1/3 cup baking cocoa
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dark chocolate chips
  • 2/3 cup zucchini, finely grated
  • 1 cup non-fat milk
  • 1/3 cup honey
  • 2 egg whites, beaten

Directions

  1. In a bowl, combine flour, brown sugar, baking cocoa, baking powder, baking soda and salt. Mix well; gently stir in chocolate chips. In a separate large bowl, combine remaining ingredients; mix well. Add flour mixture to zucchini mixture; stir only until well combined.

  2. Spoon batter into muffin cups sprayed with non-stick vegetable spray, filling cups 2/3 full. Bake at 400 degrees for 18-20 minutes, until a toothpick tests clean. Cool muffin tin on a wire rack for 10 minutes; remove muffins from tin.
