Chorizo Burrito Bowls

Ingredients

  • 2 tsp canola oil
  • 12 oz package fully cooked chorizo or jalapeno chicken sausage links, sliced
  • 1 medium onion, chopped
  • 15 oz can black beans, rinsed and drained
  • 10 oz can diced tomatoes and green chilies, undrained
  • 1 cup fresh or frozen corn
  • 8.8 oz package ready-to-serve brown rice
  • 2 cups fresh baby spinach
  • 1/4 cup crumbled queso fresco or shredded Monterey Jack
  • Chopped fresh cilantro

Directions

  1. In a skillet, heat oil over medium heat. Add sausage; cook and stir until lightly browned. Remove from pan.

  2. Add onion to same skillet; cook and stir 3-5 minutes or until tender. Stir in beans, tomatoes, corn and sausage; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in rice and spinach; cook 2-3 minutes or until heated through and spinach is wilted. Sprinkle with cheese and cilantro.
