Almond Snowball Cookies

Ingredients

  • 2 cups corn flakes
  • 1 cup margarine or butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp. vanilla
  • 1 3/4 cups sifted all-purpose flour
  • 1/2 tsp. salt
  • 2 cups finely chopped almonds
  • 1 1/2 cups confectioners' sugar

Directions

  1. Crush corn flakes and set aside. Beat margarine and sugar until light and fluffy. Add egg and vanilla; beat well.
  2. Sift together flour and salt. With pastry blender cut flour mixture into margarine mixture. Stir in corn flake crumbs and almonds.
  3. Shape level measuring tablespoons of dough into balls and place on ungreased baking sheets.
  4. Bake at 350 degrees oven about 20 minutes or until lightly browned. Cool slightly on baking sheet then roll in confectioners’ sugar.
